GRANDMA JULIE'S HEALTHY BARLEY LENTIL SOUP

INGREDIENTS:

1 Tbsp margarine
1/3 cup chopped onion
1/3 cup chopped celery
3 cups of chicken or vegetable broth
1/3 cup of barley
2 1/2 cups canned italian tomatoes chopped
1/4 cup split red lentils
salt and pepper
1/4 tsp basil
1/3 cup chopped carrot

INSTRUCTIONS

  1. melt margarine in saucepan. Add onion and celery and cook over low hea for 5 minutes
  2. Add broth and barley and cover and simmer about 45 minutes
  3. Stir in tomtoes, lentils, basil, carrots and salt and pepper to taste
  4. Cover and continue cooking gently about 30 minutes
