DILL CUCUMBER SOUP A LA MARCIA BLUMBERG

INGREDIENTS:

1 1/2 cups peeled sliced English cucumbers
2 Tbsps. chopped onion
1/4 tsp. dried dill crushed / is using fresh dill use more
2 Tbsps. margarine or butter
1 can cream of celery soup
1/3 cup low fat plain yogurt

INSTRUCTIONS

  1. melt margarine in saucepan. Cook cucumber, onions, and dill in margarine until they become soft.
  2. add can of soup (no water).
  3. blend soup in food processor until smooth.
  4. return soup to pot and gradually stir in yogurt.
  5. can be served hot or cold.
